Caramelise, crystallise or coat with chocolate: the basic recipes for our TP pans, to adapt to your products.

Caramelisation

For an 8 kg pan

  • 3 kg of sugar
  • 5 kg of almonds, hazelnuts or peanuts

Keep the pan stopped until the sugar melts, then mix. Tilt the pan onto a marble slab, spread with a spatula and cut.

Pralines d’amandes sablées

Sugar-coated pralines

For an 8 kg pan

  • 3 kg of sugar
  • 1 litre of water
  • 4 kg of almonds, hazelnuts or peanuts

Pan running, burner lit: the water evaporates, the product goes through the sanding phase, then the praline phase.

Chocolate coating

For an 8 kg pan

  • 2.5 kg of raw almonds or hazelnuts
  • 1.5 kg of sugar cooked to 117 °C
  • 1 kg of dark couverture and 75 g of cocoa butter

The nuts are sugar-coated and roasted through in the pan, then gradually coated with praliné and couvertures.

TP praline coating pan: your questions

A praline coating pan is used to caramelise, sugar-coat (praline) or chocolate-coat nuts: almonds, hazelnuts, peanuts, cashews… The pan rotates above a gas burner that cooks the sugar directly on the products. This is how you make pralines, caramelised nuts, nougatine or chocolate-coated nuts.

The TP 300 has an 8 kg capacity, a 42 cm pan and 300 W of power (62 × 50 × 66 cm, 35 kg). The TP 400 goes up to 20 kg, with a 52 cm pan and 400 W (77 × 55 × 115 cm, 58 kg). The TP 450 builds on the TP 400 and adds built-in ventilation, which speeds up drying and cooling (63 kg).

TP praline coating pans are heated with butane or propane gas. The burner is fitted with electronic ignition and a safety valve. The rotation motor runs on 230 V single-phase.

For an 8 kg pan: 3 kg of sugar, 1 litre of water and 4 kg of almonds, hazelnuts or peanuts. Start the pan and light the burner; the water evaporates, the product goes through the sanding phase, then the praline phase. From time to time, separate any nuts that stick together.

Yes. The almonds or hazelnuts are first sugar-coated and roasted through in the pan, then, once cooled, gradually coated with a mix of praliné and milk and dark couvertures. For chocolate coating in large series, the THT horizontal dragée panning machine is also available.
